chocolate chip scones

One of our favorite, quick breakfast treats (besides oatmeal or granola) is scones. After you get the technique down, you can mix them up in about 10 minutes and then they bake in just 15 minutes. They are great if you are in a hurry and need to take something in the car to eat, or are just having a little tea party. And they make the house smell so good! Our recipe is from Fannie Farmer. As long as you pay attention to the fat and flour ratio - there is alot of room to play and experiment with these.

what you need

2 cups of flour (I use one cup of unbleached all purpose and one cup of whole wheat)
2 t baking powder
1T sugar
1/2 t salt
4 T butter (1/2 stick)
2 eggs
1/2 cup cream (I have used full fat yogurt with good result)
big handful of chocolate chips, dried fruit, chopped nuts...anything you want
how about some cinnamon or nutmeg? or vanilla? whatever you are in the mood for!

what to do

preheat oven at 425
mix dry ingredients
cut in butter (with your fingers, a fork, a pastry cutter or the Cuisinart)
add in wet ingredients and stir
knead gently and roll out dough to just under an inch thick
cut into triangles
bake for 15 minutes

Happy weekend!

  1. We are lovers of scones as well (especially of the chocolate chip variety!). Our recipe is very similar, except we use buttermilk. Yum!
